Rudy's Creamed Corn

So this may not be the healthiest side dish, but it's definitely a must-have!  This recipe is courtesy of Rudy's BBQ in San Antonia, Texas.  Ask my Aunt Cheryl who visits Rudy's all the time.  She is a lover of this recipe, and once you try it, you will be too!

Rudy’s Creamed Corn
 
Total Time: 4 hrs 10 min
Prep: 10 min
Cook: 4 hrs
Yield: 6-8  
 
Ingredients
4 lbs. frozen sweet corn
2 8 oz blocks cream cheese, diced into 1 inch squares
1 stick (4 oz) of salted butter
¾ cup heavy whipping cream
4 tablespoons of sugar
1 teaspoon black pepper
½ teaspoon salt

Directions
1. Place all of the ingredients into a crock pot and stir to mix.
2. Cook on medium or low for at least 4 hours. The slow cooking process allows the corn to soak up all of the sweet creamy goodness.
3. Serve directly out of the crock pot or in a serving bowl and enjoy!
